Prepare the Cake Batter

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Let it cool slightly.

Mix Eggs and Sugar
In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolk until the mixture is pale and slightly thickened.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Add the vanilla extract and a pinch of salt.

Add Flour
Sift the all-purpose flour over the chocolate mixture and gently fold it in using a spatula until just combined.
Bake the Cakes

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Cool Slightly
Remove the ramekins from the oven and let them cool for 1 minute. Run a knife around the edge of each ramekin to loosen the cake.
