Method

Chickpea Fritters

    Prepare Chickpeas

    Drain and rinse the canned chickpeas under cold water, then place them in a food processor.

    Mix Ingredients

    Add the chopped red onion, garlic cloves, fresh parsley, cumin powder, coriander powder, baking powder, salt, black pepper, and all-purpose flour to the food processor with the chickpeas.

    Blend Mixture

    Pulse the mixture until it is combined but not completely smooth. You want some texture.

    Shape Fritters

    Form the mixture into small patties or fritters using your hands.

    Cook Fritters

    Heat olive oil in a skillet over medium heat and fry the fritters for about 3-4 minutes on each side until golden brown.

Labneh

    Strain Yogurt

    In a bowl, combine plain yogurt and salt. Place a cheesecloth over a sieve and pour the yogurt mixture into it.

    Drain Liquid

    Let the yogurt drain for 1-2 hours in the fridge until it reaches a thick consistency.

    Serve Labneh

    Transfer the strained yogurt to a serving bowl and drizzle with olive oil.

Green Harissa

    Prepare Ingredients

    In a food processor, add fresh cilantro, fresh mint, jalapeño, garlic clove, ground cumin, olive oil, and salt.

    Blend Harissa

    Blend until smooth, adjusting the consistency with more olive oil if necessary.

Honey-Eggplant

    Prepare Eggplant

    Slice the eggplant into rounds about 1 cm thick.

    Cook Eggplant

    Heat olive oil in a skillet over medium heat and sauté the eggplant slices for about 5-7 minutes until they are tender.

    Add Honey

    Drizzle honey over the cooked eggplant and sprinkle with salt. Cook for an additional 2 minutes.
