Preparing the Broth

    Prepare the Chiles

    Remove stems and seeds from guajillo and ancho chiles. In a dry skillet, toast them over medium heat for 2-3 minutes until fragrant, being careful not to burn them.

    Blend Ingredients

    In a blender, combine toasted chiles, onion (chopped), garlic, cumin, oregano, salt, and black pepper. Add 1 cup of beef consommé and blend until smooth.

    Braise the Short Rib

    In a large pot, add the short rib and pour the blended sauce over it. Add the remaining beef consommé and bring to a boil. Reduce heat to low and cover, simmering for 3-4 hours or until the meat is tender and easily shredded.

Assembling the Tacos

    Prepare the Tortillas

    While the meat is braising, heat corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

    Shred the Meat

    Once the meat is tender, remove it from the pot and shred it with two forks. Reserve the broth for dipping.

    Assemble the Tacos

    On each tortilla, add a portion of shredded meat, top with shredded cheese, chopped onion, and fresh cilantro. Drizzle with salsa roja.

    Serve

    Serve the tacos with a small bowl of the reserved beef consommé for dipping. Enjoy your Birria Tacos!
