In a blender, combine the fresh mint leaves, fresh tarragon leaves, and olive oil. Blend until smooth. Strain the mixture through a fine mesh sieve into a clean bottle, discarding the solids. Set aside.

Mix the Ingredients
In a cocktail shaker, add the gin, Salers aperitif, lavender-infused honey, and fresh lemon juice. Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.

Strain the cocktail into a chilled coupe glass.
