Prepare the Brisket
Trim any excess fat from the brisket, leaving about 1/4 inch of fat for flavor.

Mix the Dry Rub
In a bowl, combine paprika, brown sugar, black pepper, salt, garlic powder, onion powder, and cayenne pepper.

Apply the Rub
Generously rub the mixture all over the brisket, ensuring it is well coated. Wrap in plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Smoking

Prepare the Smoker
Soak hickory wood chips in water for at least 30 minutes before smoking.

Preheat your smoker to a steady 225°F (107°C).

Drain the soaked hickory wood chips and add them to the smoker.

Place the brisket in the smoker, fat side up. Smoke for approximately 1.5 hours per pound, or until a meat thermometer registers 195°F (90°C) in the thickest part.
