Meat Preparation

    Prepare Beef Brisket

    Rub the brisket with salt, black pepper, and smoked paprika. Let it marinate for at least 1 hour or overnight in the refrigerator.

    Prepare Pork Ribs

    Remove the membrane from the ribs. Rub with salt, pepper, garlic powder, and onion powder. Allow to marinate for 1 hour.

    Prepare Chicken Thighs

    Season the chicken thighs with salt, pepper, and garlic powder. Let them sit for 30 minutes.

BBQ Sauce Preparation

    Make the BBQ Sauce

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.

Cooking

    Cook Beef Brisket

    Preheat your smoker or grill to 225°F (107°C). Place the brisket on the grill and cook for 1.5 hours per pound, basting with BBQ sauce every hour.

    Cook Pork Ribs

    Place the ribs on the grill and cook for about 3 hours, wrapping in foil after 2 hours and applying BBQ sauce during the last 30 minutes.

    Cook Chicken Thighs

    Grill the chicken thighs over medium heat for about 25-30 minutes, flipping halfway and basting with BBQ sauce.

Side Preparation

    Prepare Coleslaw

    In a large bowl, mix coleslaw mix with your favorite dressing. Chill in the refrigerator until ready to serve.

    Follow the package instructions to bake the cornbread. Allow to cool before slicing.

    Heat the baked beans in a saucepan over medium heat until warmed through.

    Slice the brisket and ribs. Serve all meats alongside coleslaw, cornbread, and baked beans. Garnish with chopped parsley and sliced jalapeños.
