    Prepare the Pork

    In a slow cooker, place the pork shoulder and season it with salt, black pepper, and smoked paprika. Add the chopped onion and minced garlic on top.

    Slow Cook

    Pour barbecue sauce over the pork and cover the slow cooker. Cook on low for 8 hours or until the pork is tender and easily shred with a fork.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix in any remaining barbecue sauce from the slow cooker.

Egg Roll Assembly

    Prepare the Filling

    In a large bowl, combine the shredded pork, cabbage, carrot, and green onions. Toss to mix evenly.

    Assemble Egg Rolls

    Place an egg roll wrapper on a clean surface, with a corner facing you. Add a generous spoonful of the filling mixture to the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a bit of beaten egg.

    Heat Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Carefully place the egg rolls in the hot oil, a few at a time, and fry until they are golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
