Prepare the Brisket
Preheat your oven to 300°F (150°C). In a small bowl, mix together smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the beef brisket.

Cook the Brisket
Place the seasoned brisket in a large roasting pan and pour the beef broth around it. Cover the pan tightly with aluminum foil and bake for 4-5 hours, or until the brisket is tender and easily shredded with a fork.

Layer the Nachos
On a large baking sheet, spread out half of the tortilla chips in an even layer. Top with half of the shredded brisket, half of the jalapeños, and half of the cheese.

Melt the Cheese
Broil the nachos in the oven for 2-3 minutes or until the cheese is melted and bubbly. Keep a close eye to avoid burning.

Add Remaining Ingredients
Carefully remove the nachos from the oven and top with the remaining brisket, jalapeños, and cheese. Broil again for another 2-3 minutes.

Serve with Toppings
Once done, remove the nachos from the oven and add dollops of sour cream, guacamole, chopped green onions, and fresh cilantro on top. Serve immediately.
