Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to make fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the water and pat the fries dry using a clean kitchen towel or paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches, frying them until golden brown and crispy, about 4-5 minutes per batch.

Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, drizzle with truffle oil, and sprinkle with grated Parmesan cheese, salt, and black pepper.

Serve
Garnish with chopped parsley and serve immediately for the best flavor.
