Method

Preparing the Home Fries

    Cook the Potatoes

    Dice the potatoes into small cubes. Heat olive oil in a skillet over medium-high heat. Add the potatoes, salt, black pepper, and paprika. Cook until golden brown and crispy, about 10-15 minutes, stirring occasionally.

Making the Hollandaise Sauce

    Whisk the Ingredients

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water and whisk until the mixture is thickened and pale.

    Add the Butter

    Gradually pour in melted butter, whisking continuously until the sauce is smooth. Season with salt and cayenne pepper. Remove from heat and keep warm.

Poaching the Eggs

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon.

Assembling the Bennie

    Split and toast the English muffins until golden brown. Place a slice of smoked salmon on each half.
