Method

Prepare the Grits

    Cook the Grits

    In a large pot, bring 4 cups of water to a boil. Add salt and slowly whisk in the grits. Reduce heat to low and cook, stirring occasionally, until thickened, about 20-25 minutes.

    Add Cream and Cheese

    Once the grits are cooked, stir in the heavy cream and cheddar cheese. Season with black pepper and keep warm.

Prepare the Shrimp and Pork Belly

    Cook the Pork Belly

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add diced pork belly and cook until crispy, about 5-7 minutes. Remove and set aside.

    Cook the Shrimp

    In the same skillet, add shrimp and Cajun seasoning. Cook until shrimp are pink and cooked through, about 3-4 minutes. Remove from heat.

Roast the Tomatoes

    Prepare Tomatoes

    Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until blistered.

Make the Sauce

    Prepare the Sauce

    In a saucepan, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Stir in hot sauce, chicken broth, Worcestershire sauce, and lemon juice. Simmer for 5 minutes.

Assemble the Dish

    Combine and Serve

    In bowls, spoon the cheesy grits, top with blackened shrimp, crispy pork belly, and roasted tomatoes. Drizzle with spicy sauce and serve immediately.
