Fried Catfish Po' Boy

Prepare the Catfish
In a bowl, combine buttermilk, salt, and black pepper. Soak the catfish fillet in the buttermilk mixture for at least 30 minutes.

Breading the Catfish
In a shallow dish, mix cornmeal, flour, salt, and black pepper. Remove catfish from buttermilk, allowing excess to drip off, then dredge in the cornmeal mixture, ensuring an even coating.

Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded catfish fillet. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Assemble the Po' Boy
Slice the fresh baked rolls in half. Spread a generous amount of cajun remoulade on both sides. Place the fried catfish in the roll and top with pickles, sliced tomatoes, and coleslaw.

Serve the Po' Boy sandwiches with house chips on the side.
