Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with a paper towel.

Make the Coating
In a large bowl, combine flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Prepare the Buttermilk Mixture
In another bowl, whisk together the egg and buttermilk until well combined.

Coat the Calamari
Dip each calamari ring into the buttermilk mixture, allowing excess to drip off, then dredge in the flour mixture to coat evenly.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Spicy Aioli
In a small bowl, mix together mayonnaise, sriracha sauce, and lemon juice until smooth.

Serve the crispy calamari hot with the spicy aioli on the side.
