    Dice potatoes and boil them until tender. Drain and sauté in olive oil with paprika, salt, and black pepper until crispy.

    In a skillet, heat the Canadian bacon slices over medium heat until warmed through and slightly crisp.

    Bring a pot of water to a gentle simmer. Crack eggs into small bowls and slide them into the water. Poach for about 3-4 minutes until whites are set but yolks are still runny.
