Cook the Canadian Bacon
In a skillet, heat the Canadian bacon slices over medium heat until warmed through and slightly crisp.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack eggs into small bowls and slide them into the water. Poach for about 3-4 minutes until whites are set but yolks are still runny.

Make the Hollandaise Sauce
In a small saucepan, whisk together egg yolks, lemon juice, and salt over low heat. Slowly whisk in melted butter until the sauce thickens. Add cayenne pepper for flavor.

Split and toast the English muffins. Top each half with a slice of Canadian bacon, a poached egg, and drizzle with hollandaise sauce. Serve with home fries on the side.
