Chicken and Biscuit

Method

Preparation

  1. 1

    Prepare Home Fries

Start by preparing the home fries. Peel and dice the potatoes into small cubes. Boil them in salted water until tender, then drain and set aside.

  2. 2

    Prepare Angus Steak

In a bowl, mix flour, baking powder, salt, and pepper. Dredge the Angus steak in the flour mixture, then dip in buttermilk and dredge again in the flour to create a thick breading.

  3. 3

    Fry Angus Steak

Heat vegetable oil in a large skillet over medium heat. Fry the breaded steak for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and let drain on paper towels.

  4. 4

    Make Cream Gravy

In a new saucepan, combine cream and chicken broth over medium heat. Whisk together and simmer for about 5 minutes until slightly thickened. Season with salt and pepper to taste.

  5. 5

    Cook Home Fries

In another pan, cook the boiled potatoes in a little oil until crispy and golden brown. Season with salt and pepper.

  6. 6

    Cook Eggs

Fry eggs to your desired style (sunny side up, over easy, etc.).

Assembly

  1. 7

    Plate the Dish

On a plate, place the fried Angus steak, and top with two eggs. Add a generous amount of cream gravy over the steak and eggs.

  2. 8

    Serve

Serve the crispy home fries on the side along with a warm, flaky buttermilk biscuit.
