    Prepare the crust

    Preheat your oven to 175°C (350°F). In a medium bowl, combine the graham cracker crumbs and melted unsalted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    Make the filling

    In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar, sour cream, and vanilla extract, mixing until fully incorporated. Add the eggs one at a time, beating well after each addition until the mixture is creamy and smooth.

    Bake the cheesecake

    Pour the cream cheese mixture over the prepared crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the edges are set but the center still slightly jiggles.

    Cool and chill

    Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then remove it from the oven and let it cool to room temperature before refrigerating for at least 4 hours, or preferably overnight.

    Serve with berries

    Once chilled, remove the cheesecake from the springform pan. Top with fresh berries before slicing and serving.
