Prepare the Risotto
In a large saucepan, heat the chicken broth over medium heat. In another pan, sauté the chopped onion and minced garlic until translucent. Add the arborio rice and cajun seasoning, stirring for a couple of minutes. Gradually add the hot chicken broth, one ladle at a time, stirring continuously until the rice is al dente. Remove from heat and fold in the crawfish tails and grated parmesan cheese. Let it cool.

Form the Arancinis
Once the risotto mixture is cool, take a handful and form it into balls (about 1.5 inches in diameter). Dip each ball first in flour, then in the beaten egg, and finally coat with bread crumbs. Set aside on a plate.

Fry the Arancinis
In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the arancini balls in batches, frying until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Serve the Cajun Crawfish Arancinis warm, garnished with additional cajun seasoning if desired.
