Directions
- 1
Prepare the Bacon
Preheat your oven to 375°F (190°C). Arrange the Billionaire bacon on a baking sheet and bake for 15-20 minutes or until crispy. Once done, remove from the oven and chop into small bits.
- 2
Prepare the Brie
While the bacon is baking, place the Brie wheel on a parchment-lined baking dish. Use a sharp knife to score the top of the Brie in a crosshatch pattern.
- 3
Assemble the Toppings
Spread the goat cheese over the scored Brie. Top with the baked bacon bits, crisp jalapenos, and house jam.
- 4
Bake the Brie
Drizzle olive oil over the top of the assembled Brie. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- 5
Serve
Remove from the oven and let it cool slightly. Top with house pickles and garnish with fresh thyme if desired. Serve warm with bread or crackers.
