    In a medium saucepan, bring 4 cups of water to a boil. Stir in grits and salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until grits are thick and creamy. Stir in butter before serving.

    In a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove and drain on paper towels. Once cooled, crumble the bacon into pieces.

    In the same skillet, crack the eggs and cook to your desired doneness (sunny-side-up, over-easy, etc.). Season with salt and pepper.

    In a serving bowl, layer the creamy grits, top with crumbled bacon, fried eggs, shredded cheddar cheese, and chopped green onions. Drizzle with hot sauce to taste.
