Preparation

  1. 1

    Cook the Sausage

In a skillet over medium heat, add the breakfast sausage and cook until browned and fully cooked, breaking it apart with a spoon as it cooks. This should take about 5-7 minutes.

  2. 2

    Prepare the Eggs

In a bowl, whisk together the eggs, salt, and black pepper. Once the sausage is cooked, push it to one side of the skillet, add olive oil if necessary, and pour the egg mixture into the empty side. Scramble the eggs until fully cooked, about 3-4 minutes.

  3. 3

    Combine Filling

Once the eggs are cooked, mix them with the sausage in the skillet. Stir in the shredded cheddar cheese until melted and combined.

  4. 4

    Assemble the Burrito

Lay a large tortilla flat on a plate. Spoon a generous portion of the sausage and egg mixture onto the center of the tortilla. Fold the sides over the filling and then roll from the bottom up to form a burrito.

  5. 5

    Serve

Repeat the assembly process for the remaining tortillas. Serve warm with salsa or hot sauce if desired.
