    Make the Biscuits

    Preheat your oven to 450°F (232°C). In a large mixing bowl, combine flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix.

    Shape the Biscuits

    Turn the dough onto a floured surface and gently knead it 5-6 times. Roll or pat the dough to about 1-inch thickness. Cut out biscuits using a biscuit cutter and place them on a baking sheet.

    Cook the Sausage

    In a skillet over medium heat, cook the sausage until browned and cooked through, breaking it into crumbles. Remove from heat and set aside.

    Fill the Biscuits

    Take a biscuit and place a spoonful of cooked sausage in the center. Top with another biscuit and seal the edges. Repeat until all biscuits are filled.

    Bake

    Bake the filled biscuits in the preheated oven for 12-15 minutes or until golden brown.

    Make the Gravy

    In the same skillet used for the sausage, add a little more butter if needed, then stir in flour to create a roux. Gradually whisk in milk, cooking and stirring until thickened. Season with salt and black pepper.

    Serve the sausage biscuits warm, topped with cream gravy.
