Prepare the Potatoes
Peel and slice the Yukon potatoes into thin rounds. Boil them in salted water for about 10-15 minutes until just tender. Drain and set aside.

Cook the Bacon
In a large skillet, heat the olive oil over medium heat. Add the streaky bacon and cook until crispy. Remove from the pan and set aside, leaving the rendered fat in the skillet.

Bake
Preheat the oven to 180°C (350°F). Bake the tartiflette for about 25-30 minutes, or until the cheese is melted and bubbling.

Serve
Remove from the oven, let cool for a few minutes, then serve hot. Season with black pepper to taste.
