    Prepare the Onions

    In a large pot, melt the butter over medium heat. Add the sweet onions and cook, stirring occasionally, for about 30-40 minutes until they are caramelized and golden brown.

    Add Liquid Ingredients

    Pour in the white wine and scrape the bottom of the pot to deglaze. Let it simmer for about 5 minutes. Then, add the beef broth, thyme, bay leaf, salt, and pepper. Bring the soup to a simmer and let it cook for another 30 minutes.

    Prepare the Croutons

    While the soup is simmering, slice the French baguette into 1-inch thick slices. Toast them in the oven until golden brown.

    Assemble the Soup

    Remove the bay leaf from the soup. Ladle the hot soup into oven-safe bowls. Place toasted baguette slices on top of the soup and generously sprinkle the Gruyère, Parmesan, and Mozzarella cheeses over the croutons.

    Broil the Soup

    Preheat the broiler. Place the bowls on a baking sheet and broil for 2-5 minutes, or until the cheese is bubbly and golden brown.
