Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat dry with a clean towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of the potato strips to the hot oil, being careful not to overcrowd the pot. Fry for about 4-5 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season and Serve

    While the fries are still hot, sprinkle with salt and black pepper to taste. Serve immediately.
