Prepare the Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels.

Season the Crabs
In a shallow dish, mix together the flour, salt, and black pepper. Dredge each crab in the flour mixture until well coated.

Cook the Crabs
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the crabs and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove the crabs from the skillet and set aside.

Make the Sauce
In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant. Add the white wine and lemon juice, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 5 minutes.

Return the crabs to the skillet and cook them in the sauce for an additional 2-3 minutes, allowing the flavors to meld.
