    Preparation

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    Dredging for Frying

    In a shallow bowl, mix cornmeal, flour, salt, black pepper, and cayenne pepper. In another bowl, whisk the eggs and milk together.

    Coat the Catfish

    Dip each catfish fillet first in the egg mixture, then dredge it in the cornmeal mixture until well coated.

    Frying the Catfish

    Heat oil in a large skillet over medium-high heat. Once hot, add the coated catfish fillets. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    For broiled catfish, preheat the oven to broil. Place the coated catfish fillets on a greased baking sheet. Dot with butter and broil for about 5-7 minutes, until the fish flakes easily with a fork.
