Fried Oysters

Method

Preparation and Cooking

  1. 1

    Prepare the Oysters

Rinse the fresh oysters under cold running water to remove any grit or sand. Drain and set aside.

  2. 2

    Make the Breading

In a shallow dish, combine flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.

  3. 3

    Coat the Oysters

Pour the buttermilk into another shallow dish. Dip each oyster into the buttermilk, allowing the excess to drip off, then coat thoroughly in the flour mixture.

  4. 4

    Heat the Oil

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Oysters

Carefully add the coated oysters to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

  6. 6

    Drain and Serve

Use a slotted spoon to remove the fried oysters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve immediately with lemon wedges.
