Chunky Bleu Cheese Dressing

Combine base
In a medium bowl, whisk together 1 cup mayonnaise, 1 tablespoon sour cream, 3 tablespoons buttermilk, 1 teaspoon lemon juice, 1 teaspoon Worcestershire sauce, and 1 teaspoon minced garlic until smooth and homogenous.

Add cheese and season
Fold in 3 ounces bleu cheese crumbles, leaving some larger chunks for texture. Season the dressing with 1 teaspoon sea salt and stir gently. Taste and adjust thickness with an additional tablespoon of buttermilk if too thick, or more mayonnaise if too thin.

Chill
Cover and refrigerate the dressing for at least 20 minutes (preferably 1 hour) to let flavors meld. Stir again before serving.

Prepare iceberg wedge
Remove any loose outer leaves from the head of iceberg lettuce. Cut the head lengthwise into 4 equal wedges (root end intact so wedges hold together). Pat wedges dry with paper towels, getting as much surface moisture off as possible so the dressing adheres.

Grill grape tomatoes
Preheat a grill pan or skillet over medium-high heat. Toss 12 grape tomatoes with 1 teaspoon olive oil and 1 teaspoon kosher salt. Place tomatoes cut-side up (or whole) on the hot pan and grill until blistered and slightly charred, 3–4 minutes, turning once so blistering is even. Remove from heat and set aside.

Assemble wedges
Place one iceberg wedge on each serving plate (this recipe yields 4 wedges). Spoon chunky bleu cheese dressing generously over each wedge, letting some drip down the sides. Scatter grilled grape tomatoes around and atop each wedge. Sprinkle the crumbled hickory bacon evenly over the wedges.

Garnish and finish
Finish each wedge with a light grinding of freshly ground black pepper (about 1/4 tsp per wedge) and a sprinkle of chopped chives (about 1/2 tbsp per wedge). Serve immediately so the lettuce remains crisp and tomatoes retain warmth.
