Shrimp & Marinade

Method

Shrimp & Marinade

  1. 1

    Marinate shrimp

In a medium bowl combine 2 tbsp olive oil, 2 tbsp lemon juice, 2 tsp minced garlic, 1 tsp kosher salt, 1 tsp black pepper and 1 tsp red pepper flakes. Add the shrimp and toss to coat. Marinate at room temperature for 10–15 minutes (no more than 30 minutes) while you prepare other components.

  2. 2

    Preheat grill or broiler

If using an outdoor grill, preheat to medium-high (about 400–450°F / 200–230°C). If broiling in the oven, position the rack 6 inches from the broiler element and preheat broiler.

Parsley Butter Sauce

  1. 3

    Melt butter and sweat garlic

In a medium ovenproof skillet or sauté pan over medium heat melt 8 tbsp unsalted butter. Add 2 tbsp minced garlic and cook, stirring, until fragrant and softened, about 30–45 seconds—do not let it brown.

  2. 4

    Deglaze and reduce

Pour in 1 cup dry white wine (or chicken broth). Increase heat to medium-high and simmer until liquid reduces by about half, 4–6 minutes. This concentrates flavor and slightly thickens the sauce.

  3. 5

    Finish sauce

Stir in 1 cup chopped parsley, 2 tbsp lemon juice, 1 tsp lemon zest, 1 tsp salt and 1/2 tsp black pepper. Remove from heat and keep warm. Taste and adjust seasoning as needed.

Grill/Bake Shrimp & Serve

  1. 6

    Cook shrimp

If grilling: thread shrimp onto skewers (optional) or place directly on the hot grill. Grill 2–3 minutes per side until pink, firm and opaque. If broiling or baking: arrange shrimp in the skillet with the prepared parsley butter sauce or on a rimmed baking sheet; broil 2–3 minutes per side or bake at 425°F (220°C) for 6–8 minutes until shrimp are opaque and cooked through. Spoon hot parsley butter over shrimp once cooked.

  2. 7

    Warm the baguette

While shrimp cook, brush baguette slices lightly with 1 tbsp olive oil and place on grill or in the oven at 375°F (190°C) for 6–8 minutes until warm and crisp at edges. Optionally sprinkle with flaky sea salt.

  3. 8

    Assemble & serve

Arrange shrimp in the skillet or on a warmed platter, pour any remaining sizzling parsley butter over the top, garnish with parsley sprigs. Serve immediately with sliced warm baguette for dipping into the buttery sauce.
