Kielbasa Filling

Prep kielbasa and vegetables
Slice the beef jalapeño kielbasa into 1/4-inch half-moons. Finely dice the yellow onion and red bell pepper so they are roughly the same size as the kielbasa pieces. Chop the cilantro and set aside.

Cook filling
Heat 1 tablespoon vegetable oil in a 10-inch skillet over medium-high heat. Add the sliced kielbasa in a single layer and cook, undisturbed, 2 minutes to brown, then stir and cook another 2 minutes until edges are caramelized. Add the diced onion and red bell pepper and cook, stirring occasionally, 3–4 minutes until softened and translucent. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Remove from heat and stir in the chopped cilantro. Transfer the filling to a bowl and keep warm.
Assembling & Grilling Quesadillas

Heat and prep tortillas
Warm the corn tortillas so they are pliable: stack them and wrap in a damp paper towel, microwave 30–45 seconds, or heat briefly on a dry skillet 10–15 seconds per side. Spread 1/2 teaspoon olive oil on a clean work surface or keep nearby for brushing. Have the butter ready to brush on the skillet side of the tortillas when grilling.

Assemble quesadillas
Lay one warm tortilla flat. Sprinkle about 1/4 cup shredded Monterey Jack evenly over half of the tortilla. Top the cheese with about 2–3 tablespoons of the kielbasa mixture (adjust to preference), then add another 1/4 cup cheese on top of the filling to help the quesadilla seal when melted. Fold the tortilla in half to form a semicircle. Repeat to make 4 assembled quesadillas (using 8 tortillas).

Grill quesadillas
Heat a large skillet or griddle over medium heat. Add 1/2 tablespoon butter and allow to melt and bubble, or brush butter on the outside of the quesadilla. Place one quesadilla buttered-side down in the skillet. Cook 2–3 minutes until the bottom is golden brown and the cheese begins to melt. Brush the top with a light layer of butter, then flip and cook 1.5–2 minutes more until the second side is golden brown and cheese is fully melted. Repeat with remaining quesadillas, adding butter as needed. Avoid cooking too hot to prevent burning before cheese melts.

Rest and cut
Transfer cooked quesadillas to a cutting board and let rest 1 minute to settle (this prevents cheese from spilling). Using a sharp knife or pizza cutter, cut each quesadilla into 4 wedges (quartered) and arrange on a platter.

Serve the quartered kielbasa quesadillas hot with sour cream, pico de gallo or salsa, lime wedges, and pickled jalapeños on the side for garnish and dipping. Squeeze a little lime over the top if desired.
