    Rinse and cook rice

    Rinse 1 cup Jasmine rice under cold water until water runs clear. Combine rinsed rice, 1.25 cups water and 1/4 tsp salt in a small pot. Bring to a boil over medium-high heat, then reduce to a low simmer and cover tightly. Cook 15 minutes without lifting the lid. Remove from heat and let rest, covered, 10 minutes. Fluff with fork before serving.

Red Beans

    Soak/prep beans (if using dry)

    If time allows, soak 1 cup dry red beans in cold water to cover by 2 inches for 6-8 hours or overnight, then drain. If short on time, skip soaking and expect longer simmer time (about 60–90 minutes).

    Sauté aromatics

    Heat 1 tablespoon olive oil in a medium pot over medium heat. Add 1 diced yellow onion, 1 diced celery stalk and 1/2 diced green bell pepper. Cook, stirring occasionally, until softened and translucent, about 5–7 minutes. Add 3 minced garlic cloves and cook 30–60 seconds until fragrant.

    Build beans

    Stir in 1 tablespoon tomato paste, 1 teaspoon smoked paprika, 1/2 teaspoon dried thyme and 1/4 teaspoon cayenne; cook 1 minute. Add the drained (or unsoaked) 1 cup red beans, 3 cups chicken or vegetable broth and 1 bay leaf. Bring to a gentle boil, then reduce heat to maintain a low simmer, partially covered.

    Simmer beans

    Simmer until beans are tender, about 45–90 minutes depending on soaking. Check every 15 minutes and add hot water or broth if needed to keep beans just covered. When beans are nearly tender, season with 1 teaspoon salt and 1/2 teaspoon black pepper. Remove bay leaf.

    Mash for creaminess

    For a creamier texture, remove 1/2 cup of cooked beans to a bowl and mash with the back of a spoon, then stir back into the pot to thicken the sauce. Stir in sliced scallions (reserve a little for garnish). Keep warm while finishing kielbasa.

Kielbasa

    Slice kielbasa

    While beans simmer, slice 1 lb beef jalapeño kielbasa into 1/4-inch thick rounds. Pat slices dry with paper towel.

    Pan-fry kielbasa

    Heat 1 tablespoon butter in a large skillet over medium-high heat. Add kielbasa slices in a single layer (work in batches if needed) and sear without moving until browned, about 2–3 minutes per side. Transfer to a plate and keep warm. If desired, add the remaining 1 tablespoon olive oil to the pan and deglaze with 1–2 tablespoons water or reserved bean cooking liquid, scraping up browned bits.

    Combine with beans (optional)

    If you prefer the kielbasa warmed in the beans, add the browned kielbasa slices to the simmering beans for the last 5–10 minutes of cooking so flavors meld. Otherwise keep sliced kielbasa on top when plating.

To Finish & Serve

    Taste beans and adjust seasoning with additional salt, pepper or cayenne as desired. Stir in chopped parsley (optional) and remaining sliced scallions for freshness.

    To serve, spoon cooked Jasmine rice into bowls, ladle a generous portion of red beans alongside or over the rice, and arrange sliced jalapeño kielbasa on top. Garnish with remaining scallions, a sprinkle of parsley, and hot sauce if you like.
