Prepare and sear
Pat the flank steak dry and season lightly with salt and black pepper. Heat 1 tablespoon vegetable oil in a skillet over medium-high heat until shimmering. Sear the steak 2–3 minutes per side until browned (it will not be fully tender yet).

Braise and shred
Add 1 cup beef broth, Worcestershire sauce, soy sauce, garlic powder, and onion powder to the skillet. Bring to a simmer, reduce heat to low, cover, and cook gently for 20–25 minutes until very tender (or transfer to a small oven-safe dish and bake at 325°F/165°C covered for 25–30 minutes). Remove the steak and shred with two forks. Return shredded beef to the pan and simmer 2–3 minutes to absorb cooking liquid; keep warm.

Caramelize onions
While the beef braises, melt 1 tablespoon butter in a medium skillet over medium heat. Add the thinly sliced red onion and a pinch of salt. Cook, stirring occasionally, 10–12 minutes until soft and golden; stir in 1/2 teaspoon brown sugar during the last 2–3 minutes to deepen color and sweetness if desired. Transfer caramelized onions to a small bowl and keep warm.

Assemble and melt cheese
Place a generous portion of shredded beef onto the bottom half of each toasted bun (divide beef evenly among 3 sliders). Top each with a spoonful of caramelized red onion and 2–3 slices of fresh jalapeño (or to taste). Arrange smoked Gouda slices over the beef and onion. Cover the skillet and warm just until the cheese melts, about 1–2 minutes; or place assembled sliders on a baking sheet and broil 1–2 minutes keeping a close eye so cheese melts but doesn’t burn.

Finish
Spread mayonnaise (if using) on the inside of the top buns, then place tops over the melted cheese. Garnish with chopped parsley and optional pickled jalapeño slices. Serve immediately while hot.
