Meat Loaf

    Prepare and mix

    Preheat oven to 375°F (190°C). In a large bowl, combine breadcrumbs and 1/2 cup milk; let soak 2–3 minutes. Add ground beef, minced onion, minced garlic, egg, Worcestershire sauce, tomato paste, chopped parsley, 1.5 tsp salt, and 1 tsp pepper. Gently mix with your hands or a spatula until just combined; avoid overworking to keep the loaf tender.

    Shape and sear

    Form the meat mixture into a compact loaf roughly 8 inches long and 4 inches wide. Heat 1 tbsp olive oil in an ovenproof skillet over medium-high heat. When shimmering, sear the loaf 2–3 minutes per side until browned (use tongs or a spatula to turn). This develops flavor and color.

    Bake

    Transfer the skillet to the preheated oven and bake for 30–35 minutes, or until an instant-read thermometer inserted into the center reads 160°F (71°C). Remove from oven, tent loosely with foil, and let rest 10 minutes before slicing. Reserve pan drippings in the skillet for use in the mushroom demi-glace.

Mashed Potatoes

    Cook potatoes

    While the loaf bakes, place the peeled and cubed potatoes in a pot and cover with cold water by 1 inch. Add 1 tsp salt. Bring to a boil over high heat, then reduce to a simmer and cook 12–15 minutes until potatoes are fork-tender.

    Mash

    Drain the potatoes well and return to the pot off heat for 1 minute to let excess moisture evaporate. Add 3 tbsp butter and warm 1/2 cup milk. Mash with a potato masher (or ricer for smoother texture) until creamy. Season with 1 tsp salt and 1/2 tsp pepper; taste and adjust. Keep warm covered until plating.

Asparagus

    Cook asparagus

    Trim woody ends from asparagus. Toss with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper. When the meat loaf is in the oven with about 12 minutes remaining, spread asparagus on a baking sheet in one layer and roast at 375°F for 8–12 minutes depending on thickness, until bright green and tender-crisp. Alternatively, blanch in boiling salted water 2–3 minutes then shock in ice water and warm in a skillet with oil for 1–2 minutes. Finish with a squeeze of lemon if desired.

Mushroom Demi-Glace

    Sauté aromatics and mushrooms

    After removing the meat loaf from the skillet, place the skillet over medium heat and add 1 tbsp butter. When melted, add the minced shallot and cook 1–2 minutes until translucent. Add 1 tsp minced garlic and cook 20–30 seconds. Add the sliced mushrooms and cook until they release liquid and brown, about 5–7 minutes.

    Deglaze and thicken

    If using, pour 1/4 cup dry red wine into the skillet to deglaze, scraping up browned bits from the pan. Cook until mostly evaporated, about 1–2 minutes. Sprinkle 1 tsp flour over the mushrooms and stir to coat; cook 30–60 seconds to remove raw flour taste.

    Finish sauce

    Slowly add 1 1/4 cups beef stock while stirring to combine. Add 1 tsp soy sauce (or Worcestershire), 1 tsp fresh thyme (or 1/2 tsp dried), and 1/4 tsp each salt and pepper. Simmer gently for 6–8 minutes until slightly reduced and glossy. Taste and adjust seasoning. If you prefer a smoother demi, strain the sauce into a small saucepan and skim fat; return mushrooms to sauce or keep them in for texture.

    Mount with butter (optional)

    For a richer sheen, whisk in 1/2 tbsp cold butter off heat until melted and incorporated just before serving.

Assembly & Serving

    Slice the rested meat loaf into 6 equal slices. Spoon a generous portion of mashed potatoes onto each plate, place a slice of meat loaf leaning against the potatoes, and arrange a few roasted asparagus spears beside. Spoon warm mushroom demi-glace over the meat loaf slices and a little onto the potatoes. Garnish with an extra sprinkle of chopped parsley if desired. Serve immediately.
