Apple topping

Prepare apples
Peel, core and dice apples into roughly 1/4-inch pieces so they soften quickly and evenly.

Heat a large skillet over medium heat. Add the unsalted butter and melt until foamy but not browned, about 1 minute.

Sprinkle the brown sugar and ground cinnamon over the apples. Stir and continue to cook 3–4 minutes until apples are tender but still hold their shape.

Drizzle the honey and lemon juice over the apples, stir to combine, and cook 1–2 more minutes until the mixture is glossy and syrupy. Taste and add a pinch of sea salt to balance sweetness. Remove from heat and set aside.

Preheat the oven to 375°F (190°C). Arrange baguette slices in a single layer on a baking sheet.

Bake the slices until golden and crisp, 8–10 minutes, flipping once halfway through for even browning. Remove from oven and let cool slightly.
Assembly & garnish

Spoon about 1 heaping tablespoon of the warm caramelized apple mixture onto each warm crustini. The apples should still be warm so they slightly melt the cheese.

Top each apple-topped crustini with roughly 3/4 teaspoon of bleu cheese crumbles (distribute the 3 oz evenly among slices). For a stronger contrast, broil for 30–45 seconds to just soften the cheese — optional.

Finish with a few fresh thyme leaves or microgreens on each piece and a light grind of black pepper to taste.

Serve immediately while crustini are warm and apples are still slightly syrupy.
