Prep tuna
Pat the ahi tuna steaks dry with paper towels. Rub both sides with 2 tablespoons extra-virgin olive oil, 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, and 1 tablespoon lemon juice. Let rest at room temperature for 10 minutes while you heat the grill or skillet.

Grill or sear
Heat a grill or heavy skillet (cast iron) over high heat until very hot (about 5 minutes). Oil the grill grates or add a thin film of oil to the skillet. Place the tuna on the hot surface and cook 45–60 seconds per side for rare (center cool and deep pink), 1.5–2 minutes per side for medium-rare, or longer to desired doneness. Avoid overcooking — ahi is best served rare to medium-rare. Remove and let rest 3 minutes, then slice thinly across the grain into 1/4-inch slices.
Chimichurri Sauce

Make chimichurri
In a food processor pulse the parsley, cilantro (if using), oregano, and minced garlic until finely chopped but not puréed (use short pulses). Transfer to a bowl and stir in 2 tablespoons red wine vinegar, 6 tablespoons extra-virgin olive oil, 1/4 teaspoon red pepper flakes, 1/2 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, and 1/2 teaspoon lemon zest if using. Taste and adjust seasoning — add a touch more vinegar or salt if needed. Let the chimichurri sit at room temperature for at least 10 minutes to let flavors meld.

Make-ahead note
Chimichurri can be made up to 24 hours ahead and refrigerated; bring to room temperature before serving and stir in a splash of olive oil if it tightens.
Naan & Finishing

Warm naan
Preheat oven to 400°F (200°C). Brush each naan lightly with melted butter (about 1/2 tablespoon each) and place on a baking sheet. Warm in the oven for 3–6 minutes until heated through and edges are slightly crisp. Sprinkle lightly with sea salt flakes after warming.

Assemble appetizer
Arrange warm naan on a serving platter. Spoon a tablespoon of chimichurri onto each piece or serve chimichurri family-style in a small bowl. Fan 3–4 slices of grilled ahi across each naan or place slices next to the naan for topping. Garnish with microgreens or cilantro leaves and serve with lemon wedges for squeezing.

Serving suggestion
Serve immediately while tuna is warm and naan is toasty. Provide extra chimichurri on the side for guests who want more.
