    Prepare the Tofu

    Press the tofu to remove excess water, then cut it into fillet shapes.

    Marinate the Tofu

    In a bowl, combine soy sauce and liquid smoke. Dip the tofu fillets in the mixture and let them marinate for at least 30 minutes.

    Coat the Tofu

    In a shallow dish, mix cornmeal, salt, and black pepper. Dredge the marinated tofu fillets in the cornmeal mixture, coating all sides.

    Fry the Tofu

    Heat vegetable oil in a frying pan over medium heat. Fry the coated tofu fillets until golden brown and crispy on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

    Prepare the Collard Greens

    In a large pot, heat a tablespoon of oil and sauté the chopped onion and minced garlic until translucent.

    Cook the Collard Greens

    Add collard greens to the pot, followed by vegetable broth. Bring to a boil, then reduce heat and simmer until the greens are tender, about 30 minutes.

    Serve the crispy tofu catfish on a plate with a generous helping of collard greens and pot likker.
