    Prepare the Duck and Prawns

    Score the skin of the duck breasts, season with salt and pepper. Sear in a hot skillet, skin-side down, until crispy. Remove and set aside. In the same skillet, sauté prawns until pink and cooked through. Set aside with duck.

    Cook the Paella

    In a paella pan, sauté chopped leeks in truffle oil until soft. Add paella rice and stir for a couple of minutes. Pour in beer and enough water to cover, bring to a simmer. Cook for about 15 minutes until rice is almost done.

    Prepare Gobo

    Peel and slice gobo into thin strips. Blanch in boiling water for 2 minutes, then shock in ice water. Add to the paella for the last 5 minutes of cooking.

    Finish the Dish

    Nestle the duck and prawns into the paella. Slice the brioche and toast lightly. Serve the paella garnished with jamon and toasted brioche on the side.
