Prepare the Chicken
Preheat the oven to 425°F (220°C). Rinse the chicken and pat it dry with paper towels. Rub the chicken all over with olive oil, then season generously with salt and black pepper. Place garlic cloves and rosemary inside the cavity of the chicken along with the lemon, cut in half.

Roast the Chicken and Squash
Place the chicken breast-side up in the center of a roasting pan and arrange the butternut squash around it. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the butternut squash is tender.

Add the Peas
In the last 10 minutes of roasting, scatter the peas over the butternut squash and return to the oven to cook.

Serve
Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve the chicken with the roasted butternut squash and peas.
