    Prepare the Ingredients

    Clean the ramps, trim the root ends, and chop the leaves roughly. Clean the cremini mushrooms and slice them. Trim the asparagus and cut them into 2-inch pieces.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped ramps and sauté for about 2 minutes until fragrant.

    Add Mushrooms and Asparagus

    Add the sliced cremini mushrooms and asparagus pieces to the skillet. Cook for an additional 5-7 minutes until the mushrooms are tender and the asparagus is bright green.

    Deglaze with Amaro

    Pour in the amaro and scrape the bottom of the skillet to release any brown bits. Allow it to simmer for 2-3 minutes until slightly reduced.

    Season and Finish

    Stir in the fresh rosemary, and season with salt and black pepper to taste. Cook for another minute to meld the flavors.

    Serve

    Remove from heat and serve warm as a side dish or over a bed of grains for a main dish.
