    Prepare the Rabbit

    Preheat the oven to 180°C (350°F). Season the rabbit with salt and black pepper, then rub with olive oil.

    Sear the Rabbit

    In a large oven-safe skillet, sear the rabbit on medium-high heat until browned on all sides. This should take about 5-7 minutes.

    Prepare Vegetables

    While searing, peel and chop the carrots and parsnips into even-sized pieces.

    Add Vegetables and Thyme

    Once the rabbit is seared, add the chopped carrots, parsnips, and fresh thyme to the skillet.

    Add Foie Gras

    Slice the foie gras and place it on top of the rabbit.

    Balsamic Glaze

    Drizzle the balsamic vinegar over the rabbit and vegetables.

    Roast in the Oven

    Transfer the skillet to the preheated oven and roast for about 45-50 minutes, or until the rabbit reaches an internal temperature of 74°C (165°F).

    Rest and Serve

    Remove from the oven and let the rabbit rest for 10 minutes before carving. Serve with the roasted vegetables and drizzled balsamic glaze.
