    Prepare the Pork Shoulder

    Preheat your oven to 300°F (150°C). Rub the pork shoulder with olive oil, minced garlic, paprika, cumin, salt, and black pepper.

    Sear the Meat

    In a large skillet over medium-high heat, sear the pork shoulder on all sides until browned, about 5-7 minutes.

    Roast the Pork

    Transfer the pork shoulder to a roasting pan. Add the chopped onion and chicken broth. Cover with foil and roast in the preheated oven for 4-5 hours, or until tender.

Grits

    Cook the Grits

    In a medium saucepan, bring water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally.

    Once the grits are thick and creamy, stir in the butter and cheddar cheese until melted and well combined.

Beets

    Prepare the Beets

    Preheat oven to 400°F (200°C). Wrap each beet in foil and roast for about 45 minutes to 1 hour, or until tender.

    Season the Beets

    Remove the beets from the oven, let cool, then peel and slice. Toss with olive oil, salt, black pepper, and balsamic vinegar.
