    Prepare the Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until softened. Drain and set aside.

    Cook the Potatoes

    In a pot, bring salted water to a boil and add the diced potatoes. Cook until tender, about 15 minutes. Drain and mash until smooth.

    Cook the Halibut

    In a pan, melt butter over medium heat. Add halibut fillet and cook for about 4-5 minutes on each side, or until cooked through. Remove from heat and let cool slightly.

    Blend the Mixture

    In a blender, combine the cooked halibut, mashed potatoes, heavy cream, saffron, salt, white pepper, fresh dill, and lemon juice. Blend until smooth.

    Incorporate Gelatin

    Heat a small amount of the blended mixture in a saucepan and dissolve the soaked gelatin in it. Stir well to combine.

    Combine and Set

    Add the gelatin mixture back to the blender and blend again until fully incorporated. Pour into a terrine mold and refrigerate for at least 4 hours or until set.

    Serve

    Once set, unmold the terrine and slice. Serve chilled with a garnish of fresh dill.
