    Prepare the Marinade

    In a bowl, mix the lamb chunks with miso paste, minced garlic, olive oil, thyme, salt, and black pepper. Ensure the lamb is well-coated. Cover and marinate for at least 1 hour or overnight in the fridge for best results.

    Sauté Fennel

    In a large pot or Dutch oven, heat a little olive oil over medium heat. Add the sliced fennel and sauté for about 5 minutes until it starts to soften.

    Brown the Lamb

    Push the fennel to the sides of the pot and add the marinated lamb chunks. Brown the lamb on all sides for about 8-10 minutes.

    Add Tomatoes and Liquid

    Add the halved cherry tomatoes and water or broth to the pot. Stir well to combine, scraping up any browned bits from the bottom.

    Simmer

    Bring the mixture to a gentle simmer. Cover the pot and let it cook on low heat for 1.5 to 2 hours, or until the lamb is tender.
