Marinate the Chicken
In a bowl, combine the buttermilk, garlic powder, onion powder, black pepper, and salt. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 2 hours, or overnight for best results.

Prepare the Breading
In another bowl, mix together the flour, cornstarch, paprika, black pepper, and salt. This will be the coating for the chicken.

Heat the Oil
In a deep frying pan, add vegetable oil and heat to 175°C (350°F). You can check the temperature by dropping a small amount of batter into the oil; it should sizzle.

Bread the Chicken
Remove the marinated chicken from the fridge. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

Fry the Chicken
Carefully place the breaded chicken thighs into the hot oil. Fry for about 6-8 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On the bottom half of each bun, spread a generous amount of spicy mayo. Add a piece of fried chicken, top with pickles and lettuce, then place the top half of the bun on. Serve immediately.
