    Prepare the Beef

    Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over high heat and sear the beef on all sides until browned. Remove from heat and let cool.

    Make the Mushroom Duxelles

    In the same skillet, add finely chopped mushrooms, shallots, and thyme. Cook over medium heat until the mixture is dry and caramelized. Remove from heat and let cool.

    Assemble the Wellington

    On a sheet of puff pastry, spread a layer of pâté, then add the mushroom duxelles on top. Place the cooled beef in the center and wrap the pastry around it, sealing the edges. Brush with beaten egg.

    Bake

    Preheat the oven to 400°F (200°C). Place the wrapped beef on a baking sheet and bake for 25-30 minutes or until the pastry is golden brown and the beef reaches desired doneness.

    Prepare Seasonal Vegetables

    While the Wellington is baking, steam or sauté seasonal vegetables until tender. Season with salt and pepper to taste.
