Dry shake (if using egg)
In a cocktail shaker, combine 2 oz bourbon, 0.75 oz fresh lemon juice, 0.75 oz simple syrup, and 0.5 egg white. Seal and shake vigorously without ice for 10–15 seconds to emulsify and create foam.

Wet shake
Add a generous handful of ice to the shaker (about 1 cup). Shake vigorously for 10–15 seconds until the shaker is very cold to the touch and the mixture is well chilled and slightly diluted.

Strain and finish
Double-strain the cocktail into a chilled old-fashioned glass over one large ice cube or into a coupe (if no ice). Add 2 dashes Angostura bitters on the foam surface and, using a toothpick, make decorative swirls if desired. Garnish with a lemon wheel or twist.

Muddle
In a cocktail shaker or mixing glass, place 3 slices of peeled cucumber and 6 basil leaves. Add 0.5 oz simple syrup and 0.75 oz fresh lime juice. Gently muddle 6–8 times—press to release cucumber juice and basil aroma but avoid shredding the basil too finely to prevent bitterness.

Add spirits and ice
Add 2 oz gin and fill the shaker with ice (about 1 cup crushed or cubed).

Shake and strain
Shake vigorously for 8–10 seconds until well chilled. Fine-strain into a rocks glass filled with crushed ice or fresh cubes to remove cucumber solids and basil bits.

Measure and chill
Juice fresh pineapple (or use high-quality fresh-pressed juice) and limes so you have 1.5 oz pineapple juice and 0.75 oz lime juice per drink. If using orgeat, have 1/4 oz measured.

Combine
In a shaker, combine 2 oz spiced rum, 1.5 oz pineapple juice, 0.75 oz lime juice, 0.25 oz orgeat (optional), and 1 dash Angostura bitters (optional). Add ice (about 1 cup).

Shake and strain
Shake vigorously for 10–12 seconds until the shaker is very cold and the outside is frosty. Fine-strain into a chilled coupe or a rocks glass over fresh ice depending on presentation preference.

Garnish with a pineapple wedge or lime wheel. Serve immediately.
