    Roast Beef

    Preheat oven to 325°F (163°C). Pat the roast beef dry and rub with 2 tbs kosher salt, 1 tsp black pepper, 2 tbs chopped rosemary, 2 tbs chopped thyme, 4 minced garlic cloves and 2 tbs olive oil. Place on a rack in a roasting pan. Roast until internal temperature reaches 125°F (about 20-25 minutes per pound for medium-rare). Rest covered loosely with foil for 20 minutes, then slice thinly against the grain. Serve with horseradish cream and chimichurri on the side.

    Herb-Roasted Chicken

    Preheat oven to 400°F (204°C). Combine 6 tbs herb butter (or softened unsalted butter mixed with 2 tbs chopped rosemary, 2 tbs chopped thyme and 4 minced garlic cloves), 1 tbs Dijon mustard, 1 tbs lemon juice, 1 tsp salt and 1/2 tsp black pepper. Rub mixture under the skin and over the chicken pieces. Arrange on sheet pans, roast for 35-45 minutes until internal temp is 165°F and juices run clear. Keep warm in low oven or chafing dish.

    Maple-Glazed Salmon

    Preheat oven to 400°F (204°C). In a bowl, whisk together 1 cup maple syrup, 1/4 cup soy sauce, 2 tbs Dijon mustard, 2 tbs brown sugar, 2 minced garlic cloves and 2 tbs lemon juice. Place salmon fillets on a sheet pan lined with parchment, brush with the glaze, and roast for 10-14 minutes until just opaque and flaky. Reserve extra glaze warmed for service. Garnish with lemon wedges.

    Smoked Tofu (Vegetarian)

    Slice smoked tofu into 1/2-inch slabs. Toss with 2 tbs olive oil, 1 tbs soy sauce, 1 minced garlic clove and 1 tbs lemon juice. Warm in a 350°F (177°C) oven for 10-12 minutes or sear in a skillet until heated through and slightly crisped. Hold warm for service.

    Baby Roasted Potatoes

    Preheat oven to 425°F (218°C). Toss halved baby potatoes with 6 tbs olive oil, 2 tbs herb butter, 1 tsp salt and 1/2 tsp black pepper. Spread on sheet pans in a single layer and roast 25-35 minutes until golden and tender, shaking pans halfway. Keep warm in chafing dishes.

    Green Beans Almondine

    Blanch green beans in boiling salted water 3-4 minutes until bright green and slightly tender. Shock in ice water and drain. In a skillet, melt 4 tbs herb butter over medium heat, add sliced almonds and toast 2-3 minutes. Add green beans, 2 tbs lemon juice, 1/2 tsp salt and 1/2 tsp pepper, toss to coat and heat through. Transfer to serving trays and garnish with reserved almonds.

    Rice Pilaf & Pasta Salad

    Prepare or reheat seasoned rice pilaf and pasta salad according to package or make-ahead instructions. Hold cold pasta salad chilled on ice or in refrigerated display; keep rice pilaf warm in a chafing dish. Stir occasionally to maintain texture and prevent drying; add a splash of stock or olive oil if too dry.

    Mixed Green Salad

    In large bowls or serving trays, combine mixed greens, halved grape tomatoes, sliced cucumber, crumbled feta and sunflower seeds. Keep chilled until service. Place balsamic vinaigrette and ranch dressing in labeled dispensers beside the salad and provide tongs and spoons for self-service.

Bread & Condiments

    Arrange assorted dinner rolls in baskets or on trays and provide softened butter in small ramekins. Place labels for horseradish cream, chimichurri and lemon wedges near corresponding protein stations. Replenish rolls every 20-30 minutes to maintain fullness of the buffet.

Dessert & Garnishes

    Arrange mini assorted pastries on tiered trays or platters. Garnish with fresh berries and dust lightly with powdered sugar just before service. Place whipped cream in a dispenser or bowl beside desserts. Replenish pastry trays as needed.

Setup & Serving

    Set chafing dishes with water pans and fuel under them; preheat chafing units before placing hot foods. Label each dish with allergen notes and a short descriptor. Place serving utensils for each tray and provide small plates, napkins and cutlery at the start of the line. Keep cold items on ice and hot items over chafers; monitor temperatures regularly (hot foods above 140°F, cold foods below 40°F). Plan staff rotation: one person to replenish hot dishes, one for cold station maintenance and one for clearing/guest assistance.
