Bake or fry the tater tots
Preheat oven to 425°F (220°C) if baking. Spread frozen tater tots in a single layer on a rimmed baking sheet; brush or spray lightly with 1 tablespoon oil. Bake 20–25 minutes, turning once halfway, until golden and crispy. If frying, heat 1–2 tablespoons neutral oil in a heavy skillet over medium-high heat. Fry tots in batches 4–6 minutes, turning occasionally, until crisp and browned. Drain on paper towels and season immediately with 1/4 teaspoon kosher salt.

Cook the bacon
While tots cook, cut bacon slices into 1/2-inch pieces. In a medium skillet over medium heat, cook bacon, stirring occasionally, until browned and crisp, about 6–8 minutes. Transfer bacon to a paper towel–lined plate to drain. Reserve 1 tablespoon bacon fat if desired for extra flavor (optional).

Prepare the spicy crema
In a small bowl combine sour cream, mayonnaise, hot sauce, smoked paprika, the remaining pinch of salt (approx. 1/4 tsp), and freshly ground black pepper. Stir until smooth and taste; adjust hot sauce or salt to preference. If too thick, thin with up to 1 tablespoon water or lime juice.

Assemble the platter
Arrange the crisp tater tots on a large ovenproof platter or sheet pan in a single layer. Evenly sprinkle the shredded sharp cheddar and pepper jack over the hot tots so cheese melts from residual heat. Scatter the crispy bacon pieces and sliced pickled jalapeños over the cheese. Return to the oven under the broiler for 1–2 minutes if needed to fully melt and bubble the cheese—watch closely to avoid burning.

Finish and garnish
Remove from oven. Sprinkle sliced green onions and chopped cilantro over the hot platter. Dollop or drizzle the spicy crema across the tots. Serve immediately with mini soft pretzels or tortilla chips for scooping. Offer lime wedges on the side for optional brightness.
