    In a mixing bowl, gently combine the ground beef with salt and pepper. Do not overwork the meat. Form into a single patty about 1/2 inch thick and 4-5 inches in diameter.

    Preheat a grill, grill pan, or heavy skillet over medium-high heat and lightly oil the surface to prevent sticking.

    Place patty on the hot surface. Cook for 3-4 minutes without moving to develop a crust.

    Flip the patty and cook for another 3-4 minutes for medium doneness. If you prefer well done, cook a bit longer.

    During the last minute of cooking, lay the cheddar cheese slice on top and close the grill to melt.

    While the patty cooks, split the bun and toast the cut sides on the grill or in a toaster until lightly golden.

    Assemble the burger: spread ketchup and mustard on the bottom bun. Add lettuce, tomato, onion, and pickle. Place the cheese-topped patty on top and crown with the top bun.

    Let the burger rest for 1-2 minutes before serving. Serve immediately with your preferred sides.
