Catfish preparation

1. Pat the catfish nuggets dry with paper towels to remove excess moisture.

2. In a large bowl, combine catfish with salt, pepper, paprika, garlic powder, onion powder, cayenne, and lemon juice. Toss to coat evenly and let marinate for 10 minutes.

3. In a shallow dish, whisk the eggs with the milk to make an egg wash.

4. In a separate shallow dish, mix the flour and cornmeal with a pinch of salt.

5. Heat the oil in a deep skillet or Dutch oven to 350-365°F (175-185°C).

6. Dredge each catfish nugget in the flour-cornmeal mixture, pressing to adhere.

7. Dip the coated nuggets into the egg wash, then return to the flour-cornmeal mixture for a double coating.

8. Fry the nuggets in batches until golden brown and cooked through, about 3-4 minutes per batch. Monitor temperature to maintain a crisp coating.

9. Drain on paper towels and serve hot with lemon wedges or your favorite dipping sauce.
